This was part of a weekly meal plan I got from The Fresh 20 (not an affiliate link).

3 lbs bone-in, skinless chicken breasts
1 Tbsp olive oil
2 tsp Herbes de Provence
4 cloves garlic, minced
1/4 tsp salt
1/2 tsp black pepper
1 Tbsp honey
1 red onion, diced (1 cup)
2 tomatoes, chopped (2 cups)
2 medium zucchini, chopped (4 cups)
1 green bell pepper, chopped (1 cup)
1/4 c raisins
1/4 c green olives, drained
2 Tbsp red wine vinegar
1/2 c basil, chopped

  1. Place chicken in slow cooker1. In a bowl, combine oil, Herbes, garlic, salt, pepper, honey, onion, tomatoes, zucchini, bell pepper, raisins, green olives, and vinegar. Pour over chicken.

  2. Cook on low for 5-6 hours or on high 3-4 hours.

  3. Stir in basil and serve over quiona or rice

Note: Not using a slow cooker? Place chicken and ingredients from Step 1 in a Dutch oven and bake at 375°F for 35-45 minutes.

My notes:I accidentally left the skin on my chicken and ended up with a lot of grease to skim off. I also did not have quite as much basil as the recipe called for and subbed some pesto I had in the freezer. I cooked this on low in the crock pot for three hours, which at that point it was quite done and the meat was somewhat dry. I think it would have been dry to the point of being inedible had I took the skin off the chicken. Despite not adding much liquid, you end up with a LOT of liquid from the veggies. I skimmed off the liquid and used it to cook my quinoa which gave it a wonderful flavor. Subbing a can of diced tomatoes if you don't have fresh on hand would totally work here.

If I ever make this again I would not make it in the crock pot, but instead would make it using the alternative directions for the oven, or roast the chicken separately. I may try thighs instead of breasts if I feel like experimenting with the slow cooker again. The combination of veggies and herbs was delicious and I can see myself using it again.
